The inverted U curve response could be explained by improved perfusion to the hippocampus –at first– and then a decrease in perfusion due to supraphysiological levels of epinephrine. Also the increase of glucose level in intersticial substance lead to an osmolar alteration that cause neurons, and other cells, to fail to have a well performance of its functions.

Maybe the amount of time you are exposed to high glucose levels also has a role on how it modulates memory.
